Steak au Poivre is served with a cognac cream sauce using the fondre left over after searing pepper crusted tenderloin. Deglazing is done with cognac which creates quite a flambe. I recommend that you don't wear a hat as the fire ball got caught under the bill and I lost an eyebrow.
